MIWA is the signature restaurant at Adiya Signature Hotel – a luxurious, design-forward boutique hotel in the heart of Kotor. We are seeking a visionary Head Chef to lead our kitchen and develop a bold, modern Mediterranean fusion menu that will position MIWA as Montenegro’s premier fine-dining destination – with the clear ambition of pursuing Michelin star recognition.
This is a unique opportunity to shape a brand-new restaurant concept from the ground up, with complete creative freedom and the full support of a high-end hospitality team.
KEY RESPONSIBILITIES:
- Create and execute an innovative, seasonal menu with Mediterranean roots and global flair
- Recruit, train, and lead the kitchen team to deliver exceptional culinary standards
- Oversee kitchen operations including budgeting, stock control, HACCP compliance, and cost management
- Collaborate with the hotel’s executive team to align the restaurant with brand and service goals
- Manage supplier relationships to ensure the highest quality, locally sourced ingredients
- Uphold impeccable hygiene, food safety, and presentation standards at all times
- Build a culture of excellence, discipline, and creativity in the kitchen
WHAT WE'RE LOOKING FOR:
- Proven experience as Executive Sous Chef in a fine-dining or Michelin-level setting
- Strong knowledge of Mediterranean cuisine, modern plating techniques, and global influences
- A natural leader with a hands-on approach and excellent team management skills
- Deep understanding of cost control, inventory, and kitchen operations
- Passion for culinary innovation and ambition to earn critical acclaim
- Fluent in English; knowledge of regional languages is a plus
