HEAD CHEF:
A luxury five-star villa hotel is seeking an experienced chef to lead our kitchen, establish restaurant operations, and take charge of organizing events and master classes. The position encompasses traditional chef responsibilities along with some duties of a food and beverage (F&B) manager, requiring adequate experience and effective management of operations and the team.
RESPONSIBILITIES OF THE HEAD CHEF:
- Organizing meal preparation for hotel guests and staff, with direct involvement in the cooking process.
- Creating menus and compiling standards for integration into the POS system.
- Supervising and managing inventory and the disposal of food items.
- Planning and optimizing kitchen stock.
- Recruiting and selecting staff for the restaurant, including planning work schedules and tasks for kitchen personnel.
- Developing and implementing standard operating procedures and checklists for kitchen staff, waiters, and bartenders.
- Ensuring compliance with sanitation and personal hygiene standards for kitchen staff.
CANDIDATE REQUIREMENTS:
- Minimum of 5 years of experience as a head chef in 4-star and 5-star restaurants, preferably with experience working on the Adriatic coast (experience in opening restaurants is particularly valued).
- Strong knowledge of Balkan and European cuisine; knowledge of Asian and Russian cuisine is a plus.
- Knowledge of local and English language is mandatory; knowledge of Russian is an additional advantage.
- Experience with computer skills and POS systems is required.
- Willingness to take on partial responsibilities of the F&B manager.
- Experience and/or willingness to organize banquet events and master classes.
