Role Description
• Lead a refined boutique culinary project;
• Full creative control of menus & concept;
• À la carte, Guest Chef Dinners, signature events;
• Small professional team, high standards, real decision power;
• English is a must.
Key Responsibilities:
· Take responsibility of all appropriate management tasks;
· Coordinate daily tasks;
· Organise and drive the culinary department and project a positive and motivated attitude amongst all team members;
· Create a weekly staff meal planning within food cost limits and ensure its quality and execution;
· Control stock levels and ordering;
· Ensure that all items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste;
· Ensure that all food products received into the hotel are of the required standard and quality and that they are stored and rotated correctly;
· Ensure that the culinary department adheres to all company and hotel policies and procedures;
· Ensure that a consistent first-class product of the highest quality is achieved and maintained, whilst adhering to operational deadlines;
· Responsible for the supervision of all kitchen hands and their activities;
· Ensure that the overall culinary department is motivated and that positive feedback on work performance is given.
Prerequisites:
· High standard of spoken and written English;
· Strong Management Capabilities;
· Flexible working hours subject to the demands of the business;
· Creativity and Innovation;
· Passion and Excellence.
Education:
· Hotel Management Graduate/ Culinary Degree or Higher
Experience
· As least 10 years’ experience cooking in a well-established restaurant or full-service hotel;
· Minimum 3 years’ experience in a similar position;
· Previous experience in luxury establishments preferred.
